🥗 Ingredients

biscoff cookie, biscoff cookie butter, milk, salt, baking powder, flour, butter, sugar, and vanilla extract.
  • Lotus Biscoff Cookies: This is the classic brand for these cookies, but if you can’t find them, try looking for Speculoos or Speculaas cookies. (These are different, but have similar warming, wintery spice profiles.) Or, buy Biscoff cookies online. 
  • Lotus Biscoff Cookie Butter: Usually found near the peanut butter in your grocery store. Or, you can buy Biscoff Cookie Butter online. Use smooth or crunchy for this mug cake!
  • Milk: Any type of milk can be used for this recipe, including plant-based milk like almond milk or oat milk. 
  • Butter: You can substitute vegetable oil for the butter, but the cake texture is definitely better when you use butter. 
  • Sugar: We use granulated sugar in this recipe, but brown sugar would work as well. 

🥣 Step-by-Step Instructions

Melt butter and let cool slightly. Mix flour, sugar, baking powder, and salt in a microwave-safe mug. Stir in milk, vanilla, and the butter. Stir in Biscoff cookie spread. Break Biscoff cookie into small pieces, and stir in.

Microwave for 75 seconds on high.

Top with whipped cream and more biscoff cookie crumbs, if desired. You could also top off with a scoop of vanilla ice cream, if you really want to indulge!

🧐 Recipe FAQs for Biscoff Mug Cake

What is biscoff?

Biscoff is the shortened version of the brand name Lotus Biscoff. These cookies were introduced in 1932 by a Belgian company who promoted them as a snack to go with coffee (biscoff = biscuit + coffee). They have a caramel-like flavor with wintery spices like cinnamon. They are comparable to Speculoos and Speculaas cookies, which have similar flavors. 

How do you soften Biscoff spread?

If you find that your Biscoff spread is too hard to spread, pop the jar into the microwave. Microwave on medium power for about 30 seconds, checking and stirring every 10 seconds until it is the consistency you are looking for.

Can you make this Biscoff mug cake vegan?

This mug cake has no egg, but does include butter and milk, so it is decidedly not vegan. However, the good news is that Lotus Biscoff cookies and Biscoff cookie butter are both vegan products! Can you make this Biscoff cake in a mug in advance?

Mug cakes are not the best choice for make-ahead recipes. They will get a little gluey if you leave them to cool completely and then try to reheat.

👩‍🍳 Expert Tips

We recommend choosing a mug with straight sides—that makes it easier to mix the cake batter, and also lets the cake rise as it bakes. Make sure to mix batter well in mug to make sure there is not a big chunk of flour on the bottom. 

When adding in the Biscoff cookie spread, you can swirl it in roughly so that you still have swoops of cookie spread within the cake, or combine it entirely for a more uniform texture. Both delicious!

Neaten the edges of the mug with a spatula or wipe the rim of your mug with a damp paper towel after adding all of the ingredients. This will ensure your cookie butter mug cake cooks and rises evenly. 

Make sure to let your cake cool slightly before eating, because the middle can be extremely hot when it comes out of the microwave. Then eat while it is still warm.

Note that microwaves are all different—you might need to microwave for more or less time depending on your appliance. You want the surface of the cake to be fully cooked, with possibly a small area that still looks a little wet. Cake will continue to cook as it sits. And of course, if you like your cake gooey, you can cook it a little less.

Ingredients
  

  • 2 tablespoons butter melted
  • 5 tablespoons flour
  • 2 tablespoons sugar
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt
  • 2 tablespoons milk
