Air Fryer Eggplant Parmesan

Air Fryer Eggplant Parmesan is deliciously healthy, and much faster to make than a traditional eggplant parm. Still cheesy and hearty, but no breading and less oil!

Ingredients Needed: eggplant, olive oil, marinara sauce, and mozzarella cheese.

Slice eggplant into rounds, sprinkle with salt, and let drain in colander for 20 minutes.

Wipe salt and moisture off eggplant, and arrange on air fryer rack. Brush lightly with olive oil.

Air fry for 7 minutes, or until tops are browned, then flip and air fry until bottoms are browned.

Remove tray from oven and top each round with a dollop of marinara sauce and a sprinkle of cheese.

Air fry for another 2 minutes, until cheese melts and starts to brown.
