ALMOND FLOUR OATMEAL COOKIES
Stir together 4 oz. butter, 1/2 cup brown sugar, 1/2 cup granulated sugar, 1 egg, and 1 tsp. vanilla
Stir in 1 3/4 cups almond flour, 1 1/2 cups oats, 1/2 t. baking soda, 1/2 t. cinnamon, 1/2 t. salt, and 1 cup of chocolate chips
Chill for 30 minutes, then scoop and roll into balls. Place on parchment-lined sheet pan.
Bake for 15-18 minutes at 350 degrees.
