Baked Artichoke Dip

This Baked Artichoke Dip features spinach, artichoke hearts, and shallots in a cheesy, creamy sauce lightened up with yogurt and fresh herbs.

Ingredients Needed: artichoke hearts, spinach, parmesan cheese, parsley, chives, garlic, greek yogurt, cream cheese, shallots, and mayo.

Drain thawed frozen spinach well, pressing out extra moisture with paper towels or a sieve.

Chop artichoke hearts, shallots, herbs, and garlic.

Heat olive oil in skillet, and add chopped shallots. Sauté for 5-7 minutes over medium heat, until shallots soften.

Stir in garlic, then add yogurt, mayo, and cream cheese. Stir until the cream cheese melts into a sauce.

In a bowl, stir together the artichokes, spinach, and herbs. Stir in cream cheese mixture, then parmesan cheese.

Scrape into a small round or oval baking dish. Bake at 350 for 30-35 minutes, until dip bubbles around the edges and is beginning to brown.

Serve with your favorite dip delivery mechanism.
