Beet Salad with Feta

The combination of roasted beets with citrusy orange slices, crunchy walnuts, and salty feta cheese is perfection, especially when topped with a balsamic vinaigrette.

Ingredients Needed: beets, walnuts, feta cheese, dijon mustard, oranges, balsamic vinegar, and olive oil.

Put walnuts on a baking sheet and bake at 400° for 8-10 minutes, until lightly toasted.

Turn oven to 450°. Put beets on aluminum foil and drizzle with olive oil and balsamic vinegar. Wrap tightly.

Bake for 45 minutes, then use a skewer to test whether they are done (could take up to an hour).

While beets are roasting, make the vinaigrette by combining vinegar and dijon mustard, then drizzle in olive oil.

Remove beets from oven, cool slightly, then peel and slice into chunks.

Use sharp knife to remove the peel of an orange, then cut into slices.

Top with feta cheese and toasted walnuts, then drizzle with balsamic dressing.
