Chicken and Shrimp  Stir-Fry

This Chicken and Shrimp Stir-Fry is on the table in under 30 minutes. A delicious meal that is packed with vegetables and is weeknight easy.

Stir-Fry Ingredients: chicken breasts, shrimp, baby spinach, shiitake mushrooms, red bell pepper, red onion, vegetable oil, cornstarch, and garlic.

Cut chicken breasts into small cubes or thin slices. Toss with cornstarch, salt, and pepper.

Chop red pepper, slice red onion, slice mushrooms, and mince garlic.

Heat oil in large skillet, add chicken, and sauté until lightly browned.

While chicken is cooking, whisk together sauce ingredients.

Remove chicken from hot pan and add shrimp. Sauté until fully cooked, about 2 minutes.

Remove from pan. Add oil, then peppers, mushrooms, onion, and garlic. Sauté until beginning to brown.

Add chicken and shrimp back to pan. Stir in baby spinach, until wilted slightly.

Add stir-fry sauce, and cook for 2 minutes, until sauce has thickened and spinach is wilted.

Serve Chicken and Shrimp Stir Fry with rice or noodles and enjoy!
