Chicken Curry with Zucchini

Only 7 ingredients: chicken, zucchini, onion, coconut milk, chicken broth, curry power, and lime

Sauté chicken breast slices in 1 tablespoon oil in large skillet until browned. Remove from pan.

Sauté zucchini sticks in 1 tablespoon butter until softened and lightly browned. Remove from pan.

Sauté chopped onions, then add curry powder and salt. After 1 minute, add coconut milk and chicken broth.

Simmer and reduce for 6 minutes, then add chicken and zucchini back to pan and heat until warm.

Add lime juice, then serve!
