French  Lentil Soup

This creamy vegetarian french lentil soup is made with onions, carrots, lentils, and spinach. Healthy and filling—perfect for lunch or dinner!

Ingredients Needed: olive oil, onion, carrots, garlic, cumin, tomato paste, lentils, vegetable broth, baby spinach, and lemon juice.

Heat olive oil, then add chopped onion and carrots. Sauté for 8-10 minutes, then add garlic.

Add cumin and tomato paste and sauté until tomato paste begins to sizzle.

Turn down heat, then add lentils, broth, and water. Simmer for 25-30 minutes, until lentils are tender.

For a thicker soup texture, use an immersion blender to blend some of the soup. Then stir in spinach and lemon juice.
