Grilled Chicken Kabobs

Greek chicken kabobs are marinated with lemon juice, olive oil, and herbs and served with grilled vegetables and a tangy yogurt sauce.

Why Make This? • Easy marinade for both chicken and veggies • No pans to clean up • Simple ingredients but tons of flavor

Ingredients You Need: chicken breasts, red onions, lemon, garlic, eggplant, bell peppers, and spices.

Cube chicken into 1-inch chunks.

Slice eggplant, de-seed peppers, and cut onion into chunks.

Make vegetable and chicken marinade.

Pour less than half the marinade in bowl with chicken.

Pour the rest of the marinade in bowl with vegetables and toss.

While food is marinating, make yogurt sauce with yogurt, mint, and lemon.

After 20 minutes, skewer chicken and onions together.

Grill skewers and vegetables until done. Vegetables will take a little longer than the chicken!

Serve grilled chicken kabobs with dip and vegetables!
