How to Make Aioli

Homemade aioli is a delicious dip for shellfish or vegetables and a next-level sandwich spread. Find out how to make it, then add different flavors!

Why Make This? • Foolproof method • So much better than store-bought! • So many uses, esp. with summer produce

Ingredients You Need: vegetable oil, lemon juice, dijon mustard, egg yolk, garlic (and then whatever flavors you want to add.)

Whisk together egg yolk, dijon mustard, lemon juice, kosher salt in a small-medium bowl.

Very slowly, begin to drip the oil into the bowl with the egg mixture, whisking constantly and vigorously.

The mixture will thicken and lighten little by little at first, and then faster and faster.

If your aioli is too thick once all the oil has been added, add a little water to loosen it up.

Whisk in a clove of minced garlic and let sit for at least 10 minutes, to allow the flavors to meld.
