Cucumber Tomato  Salad

Only 9 ingredients: Tomatoes, cucumbers, red wine vinegar, red onion, feta cheese, olives, olive oil, sumac, and feta cheese.

Make the dressing by whisking together vinegar, olive oil, salt, and pepper.

Slice cherry tomatoes and olives in half, and chop cucumbers and red onion.

Combine tomatoes, cucumbers, olives, and onion in large bowl and stir in vinaigrette and feta cheese.

To make pita chips, cut pita bread into triangles and paint with mixture of olive oil, sumac, and salt. Bake for 12 minutes at 350 degrees.

Serve this Mediterranean-inspired salad with crispy pita chips!
