Nicoise Salad

This Nicoise Salad features green beans, potatoes, hard-boiled eggs, tomatoes, tuna, and olives in a dijon vinaigrette.

Ingredients Needed: Jarred tuna, green beans, potatoes, olives, anchovies (optional), eggs, and tomatoes.

Trim green beans and cut potatoes in halves or quarters.

Boil green beans until just tender, then remove with slotted spoon and rinse in cold water.

Add potatoes to boiling water and cook until just tender, about 15 minutes.

Dressing Ingredients Needed: dijon mustard, champagne vinegar, herbes de provence, olive oil, salt, and pepper.

Whisk together vinegar and mustard, then slowly whisk in olive oil. Add herbs, salt, and pepper to taste.

Arrange ingredients on a large platter, then drizzle with dressing.

Or, serve this Niçoise Salad on individual plates.
