Pasta with Zucchini and Mushrooms

This summer pasta dish is packed with savory sautéed zucchini and mushrooms, and topped with a decadent ball of burrata cheese.

Ingredients Needed: Zucchini, shiitake mushrooms, button mushrooms, broth, shallots, garlic, basil, olive oil, burrata cheese, and pasta.

Trim and slice zucchini and both types of mushrooms.

Peel and slice shallots. Peel and mince garlic cloves. Slice basil leaves into slivers.

Heat olive oil in large skillet, then add zucchini slices and shallots.

Sauté until tender and browned. Add garlic and cook for another minute, then remove from pan.

Add olive oil, then mushroom slices, and cook until lightly browned.

Add zucchini back to pan, add broth, and simmer until slightly reduced.

Add cooked pasta to skillet and toss until well-combined.
