Penne al Salmone

Ingredients Needed: Penne pasta, smoked salmon, heavy cream, parmesan cheese, vodka, onion, butter, tomato paste, garlic, and chives.

Boil water and cook penne pasta according to package directions. Reserve 1/2 cup pasta water, then drain pasta and set aside.

Slice smoked salmon into small pieces. Finely chop 1/2 white onion and a garlic clove.

Melt butter in skillet, then add onion and garlic. Sauté until softened, about 8-10 min.

Stir in tomato paste, then vodka. Cook until vodka evaporates, about 1 min.

Add heavy cream and simmer for 7 min. Stir in lemon juice, salt, and pepper to taste.

Stir in cooked penne pasta and drizzle in 1/4 cup of pasta water. Toss until well coated, then stir in smoked salmon.

Serve Penne al Salmone with chopped chives and grated parm!
