Pumpkin Soup

Only 8 ingredients: pumpkin, veg broth, coconut milk, chili powder, onion, olive oil, garlic, and lime.

Halve pumpkin, and scrape out seeds and pulp. (Reserve seeds for roasting!)

Add a garlic clove to each pumpkin half, drizzle with olive oil, and flip over.

Bake for 30 minutes at 400 degrees, until pumpkin is tender.

Meanwhile, sauté onion slices in olive oil in a saucepan, until softened.

Add pumpkin flesh, garlic cloves, vegetable broth, coconut milk, chili powder,  and salt and simmer for 10 minutes.

Let cool for 15 minutes, then blend using an immersion blender or food processor.

Stir in lime juice, garnish with roasted pumpkin seeds, and serve!
