Salmon Asparagus Pasta

Salmon and Asparagus Pasta is perfect for spring: sauteed fresh asparagus tossed with pasta, creme fraiche, lemon juice, and smoked salmon.

Ingredients You Need: asparagus, smoked salmon, lemon, garlic, olive oil, pasta, creme fraiche, and chives.

Snap off the bottom inch or so of the asparagus stems. If your asparagus has thick stalks, peel the outside layer of skin with a vegetable peeler.

Slice stalks into 2-inch chunks, cutting in half any thick pieces.

Heat olive oil in skillet, and sauté minced garlic, then add asparagus and cook until crisp-tender and lightly browned.

Meanwhile, cook pasta to al dente, then drain and stir in crème fraîche, lemon juice, and lemon zest.

Stir asparagus into pasta, then stir in smoked salmon, cut into small pieces. Garnish with chives and lemon wedges.
