Spinach Quiche

This Spinach Quiche is a traditional French dish—a custard of eggs, cream, cheese, and spinach baked in a pastry shell.

Ingredients You Need: spinach, pie crust, cream, gruyere cheese, dijon mustard, shallots, butter, nutmeg, and eggs.

Press your pie crust into a 9-inch pie dish, and fold sides under. Prick with fork and heat oven to 375.

Line with parchment paper and cover bottom with rice, beans, or pie weights. Bake for 20 min.

Remove parchment and weights, and bake for another 5 minutes. Edges should be golden brown.

Meanwhile, sauté sliced shallots in butter in a nonstick skillet.

Whisk together eggs, cream, mustard, salt, and pepper in a medium bowl.

Add shallots to crust, topped with spinach and sprinkled with shredded cheese.

Pour in egg mixture, sprinkle with cheese and nutmeg, and put in the oven.

Bake for 25-30 minutes, until custard is fully set and the top of the spinach quiche is lightly browned.
