Strawberry Mimosa

Strawberry mimosas are the perfect late-spring cocktail, featuring strawberry syrup topped with sparkling wine and finely chopped strawberries.

Just 3 Ingredients: strawberries, sparkling wine, and sugar.

Finely chop a quarter pound of strawberries and set aside for garnish.

Roughly chop another quarter pound of strawberries and combine with sugar and water in saucepan.

Simmer for 10 minutes, until liquid bubbles and thickens into a syrup.

Strain strawberry syrup into a measuring cup, pressing on the solids, then cool in refrigerator.

Pour small amount of strawberry syrup into champagne flutes.

Fill flutes with champagne, then stir gently and top with strawberries.

These strawberry mimosas are the perfect spring cocktail!
