Tuscan White Bean Soup

Sauté sausage in large soup pot until browned, and remove any excess fat.

Add olive oil, then chopped onions and potatoes to pot. Sauté until vegetables soften, then add garlic.

Add sundried tomatoes and chicken broth, then simmer gently for 15 minutes, until potatoes are tender.

Add white beans, kale, and cream. Simmer for 5-10 minutes.
