Zucchini and Mushrooms

This healthy side dish features caramelized, tender zucchini and mushrooms brightened with a splash of balsamic vinegar.

Ingredients Needed: Zucchini, shiitake mushrooms, button mushrooms, shallots, garlic, thyme, olive oil, and balsamic vinegar.

Trim and slice zucchini and both types of mushrooms.

Peel and slice shallots. Peel and mince garlic cloves.

Heat olive oil in large skillet, then add zucchini slices and shallots.

Sauté until tender and browned. Add garlic and cook for another minute, then remove from pan.

Add olive oil, then mushroom slices, and cook until lightly browned.

Add balsamic vinegar and thyme, then stir back in sautéed zucchini.

Garnish zucchini and mushrooms with more fresh thyme, and serve!
