Zucchini Tofu Stir-Fry

Ingredients: pantry ingredients plus zucchini, tofu, red pepper, red onion, and ginger!

Whisk together soy sauce, sesame oil, rice vinegar, cornstarch, red pepper, brown sugar, and water.

Slice zucchini, and chop red pepper into small chunks.

Cube tofu and sauté in nonstick skillet until lightly browned.

Remove tofu from skillet. Add oil, then sauté sliced red onion, garlic, and ginger.

Stir in zucchini and red pepper, and sauté until tender and starting to brown.

Stir in tofu, then add sauce. Cook for 30 seconds, until sauce forms a glaze.
