Vanilla Bean  Crème Brûlée

Ingredients Needed: heavy cream, egg yolks, sugar, whole milk, vanilla bean, and salt.

Split a vanilla bean and scrape out seeds.

Combine heavy cream, whole milk, sugar, vanilla bean seeds, and vanilla bean pod in a medium saucepan.

Heat until sugar dissolves, and the mixture bubbles around the edges. Put egg yolks into a large measuring cup and whisk until smooth.

Pour in a few ounces of the hot cream mixture while whisking until well-combined.

Slowly pour the rest of the cream mixture into the egg yolks while stirring constantly.

Fill ramekins with crème brûlée custard and put into large glass baking dish.

Pour just-boiled water halfway up the sides, then bake for 30-35 minutes, until custards are just set. Remove to a cooling rack.

When cool, refrigerate for at least 3 hours. When ready to serve, sprinkle with sugar, then use a kitchen blowtorch to brûlée the top.

Serve this vanilla bean Crème Brûlée with fresh berries on top!
