Lemon  Ricotta Cake

Ingredients You Need: ricotta cheese, flour, almond flour, sugar, eggs, lemons, vanilla extract, baking powder, and olive oil.

Butter the sides and bottom of a 9-inch cake pan, and line with parchment paper.

Whisk together all-purpose flour, almond flour, sugar, baking powder, and salt.

In another bowl, whisk ricotta cheese, eggs, vanilla extract, lemon juice and zest, and olive oil.

Add dry ingredients to liquid ingredients and stir until batter comes together.

Pour batter into prepared pan.

Bake at 350 degrees for 30 minutes, until top is golden brown and springy.
