Salmon  Stir Fry

This colorful Salmon Stir Fry is a delicious way to eat healthy. Chunks of perfectly cooked salmon and tons of vegetables combined in a spicy, savory sauce!

Stir Fry Ingredients Needed: salmon, mushrooms, broccoli, red onion, bell peppers, ginger, garlic, scallions, and vegetable oil.

Sauce Ingredients Needed: soy sauce, rice vinegar, sesame oil, brown sugar, cornstarch, and crushed red pepper.

Whisk together sauce ingredients and set aside.

Cut salmon into chunks. Chop peppers, quarter mushrooms, slice onion, and mince garlic and ginger.

Heat oil in skillet, then add salmon cubes. Brown on both sides.

Remove salmon and add mushrooms to pan. Cook for 3 minutes, then add broccoli. Cover and cook 2 minutes.

Add oil, then garlic, ginger, onions, and peppers. Stir together and sauté until vegetables are tender.

Add salmon back into pan, toss gently, and stir in sauce. Cook for 2 more minutes until sauce thickens.

Serve this Salmon Stir Fry with sliced scallions and rice. Enjoy!
