Stuffed Tomatoes

Tomates Farcies (Baked Stuffed Tomatoes) are a classic French dish featuring ripe summer tomatoes stuffed with a mixture of sausage, ground beef, and herbs.

Ingredients Needed: Tomatoes, sausage, ground beef, onion, parsley, garlic, breadcrumbs, olive oil, and herbes de provence.

Slice off tops of tomatoes, and scoop out the filling, reserving it in a bowl.

Finely chop pulp and return to bowl with tomato juice.

Peel and finely chop onion and garlic cloves.

Sauté onion and garlic until tender and lightly browned. Then add tomato pulp and juice and reduce for 8 minutes.

Combine beef, sausage, breadcrumbs, herbs, salt, and pepper in medium bowl.

Stir in cooled onion-tomato mixture.

Put empty tomatoes in a baking dish, then fill with sausage mixture.

Add tomato lids, drizzle with olive oil, and bake for an hour.

Serve Baked Stuffed Tomatoes on a bed of rice and enjoy!
