My Lotus Biscoff obsession started with those little cookie packets you get on airline flights. What were these cookies that were so gingery, warming, and delicious? They are the perfect afternoon bite, along with a cup of tea.

But after training as a pastry chef 20 years ago, I realized that Biscoff cookies could do so much more. I tried them as a substitute for graham crackers in cheesecake (excellent) and as a layering ingredient in a Strawberry Parfait (also excellent). I then expanded into other desserts. In fact, Biscoff flavor pairs beautifully with anything heavy on the brown sugar or warming spices. It’s great in cakes, cookies, truffles, and even breakfast recipes. I’ve pulled together some of my favorites for you to try.

Another option is to use Lotus Biscoff Spread, which is the Biscoff brand for cookie butter. Like peanut butter, this comes in both crunchy and smooth versions. You can fold Biscoff cookie butter into brownie batter or cake batter, incorporate it into Biscoff buttercream, or use it to make a delicious wintery latte. 

Note that Biscoff spread is always easier to use at room temperature, though you can even microwave it for a short amount of time if you need a runnier consistency.

What are biscoff cookies?

In 1932, a Belgian company introduced Lotus biscoff cookies, promoting them as a snack to go with coffee (biscoff = biscuit + coffee). Their caramel-like flavor is accented by wintery spices like cinnamon. They are comparable to Speculoos cookies and Speculaas cookies, which have similar warming flavors. And, they have a delicious crunch! Lotus biscoff cookies are vegan as well. 

What to Serve with Your Biscoff Desserts

How to Store Leftover Biscoff Cookies

If you find you don’t use an entire package of biscoff cookies, take the remaining cookies and put them into an airtight container. These cookies will last at least a couple of weeks before getting stale or soft. Such a win for biscoff lovers!

Flavors that Pair Well with Biscoff

That distinctive biscoff flavor pairs well with flavors like brown sugar, vanilla, and white chocolate. Biscoff also goes well with spices like cinnamon, nutmeg, allspice, and cloves. Try adding white chocolate chips to a biscoff cookie recipe. And adding vanilla extract to almost any recipe with biscoff is a good match!
