Add apple chunks, honey yogurt, spinach leaves, and ginger to a blender.
Pour in lemon juice and coconut water.
Blend well until completely combined, scraping down the sides of the blender jar as necessary.
Pour into glasses and serve.
If after blending, you would like a thicker smoothie, add 1 cup of ice and blend.
Notes
Recipe Tips: Choose a sweet/tart apple like a Pink Lady or a Honey Crisp. If you use a very tart green apple, you may want to add more honey to the recipe. As long as you have a powerful high-speed blender, like a Nutribullet, you don’t need to peel the apple in this green smoothie recipe. If you find that your blender does not make your smoothie smooth enough with an unpeeled apple, next time peel the apple before blending. Try adding other flavors to this smoothie, including berries, mango, and pineapple. One of my favorite juice bars puts jalapeño in their spinach smoothies, which I love! The punch from jalapeño and ginger is really excellent. And of course, using other liquids adds flavor too. Try using apple juice, orange juice, coconut milk, or white grape juice.Storage Tips: Store leftover smoothie with a tight lid, in the refrigerator, for up to 24 hours. Shake well before drinking, or put it back in the blender to mix again. You can add an ice cube or two to make it thicker.
