- Greek Yogurt: Greek yogurt adds tangy-ness to this smoothie. If you prefer a sweeter smoothie, try vanilla yogurt instead.
- Lemon Juice: Fresh lemon juice is best—you’ll need the juice from 1 lemon for this smoothie.
- Coconut Water: The lightly sweet flavor of coconut water is lovely with this apple spinach combo. If you don’t have any, try replacing with any kind of milk (both dairy and dairy-free milk, like almond milk or soy milk, work!)

Cut 1 apple into chunks, removing the seeds. Stir 2 teaspoons honey into 1 container of plain Greek yogurt. Add apple chunks, 2 cups baby spinach leaves, honey yogurt, and 1 tablespoon minced fresh ginger to a blender.
Pour in 2 tablespoons lemon juice and ¾ cup coconut water. Blend well until completely combined, scraping down the sides of the blender jar as necessary.
Pour into 2 glasses or 1 large mason jar, and serve. If after blending, you would like a thicker smoothie, add ½ cup of ice cubes and blend.

Ingredients
- 1 apple

- 1 5.3 ounce container Greek yogurt
- 2 cups baby spinach leaves, packed (about 2.9 ounces)
- 1 tablespoon minced fresh ginger
- 2 tablespoons lemon juice
- ¾ cup coconut water
