Whisk together yogurt, tahini, 1 tablespoon of lemon juice, and soy sauce.
Taste sauce, and add more lemon juice a teaspoon at a time, to taste.
Add the water a tablespoon at a time, until the sauce reaches the consistency you want.
Season to taste with salt and pepper.

Storage Tips: This tahini yogurt dressing will last for 3-4 days in an airtight container in the refrigerator. I like to keep it in a small mason jar with a tight lid.Expert Tips: Be sure to stir your tahini very well before using, especially if it has been sitting on your pantry or refrigerator shelf for a while. Also, note that packaged tahini really varies in how thick it is. If yours is so thick it is more like a paste, you may need to add more water to your sauce. For a really smooth sauce, you can put the ingredients in the food processor instead. For a gluten-free sauce, use tamari instead of soy sauce.
