This St. Germain Spritz is a light, floral twist on the classic Aperol Spritz—so elegant but refreshingly simple. Perfect for brunches, warm evenings, or anytime you want a cocktail that feels just a little bit fancy.

My 3 years in France sitting outside on warm Parisian terraces nurtured my deep love of the Aperol Spritz. But there’s a new contender on the scene for my favorite summer cocktail, and it’s this St. Germain Spritz. Replacing Aperol with St. Germain makes for a cocktail that is just a little sweeter and softer—and has a lovely floral flavor and scent.

Why Make This St-Germain Spritz Recipe

  • Low-Alcohol: This low ABV cocktail is the perfect drink for a hot day, or when you want to start off a dinner party with something a little lighter.
  • Crowd-pleaser: Who doesn’t love something bubbly, crisp, and a little sweet? This simple cocktail is a winner. 

🥗 Ingredients

Bottles of St. Germain elderflower liqueur, club soda, sparkling wine, and a lemon are arranged side by side on a surface.
  • Prosecco: Choose a dry Prosecco to balance the sweetness of the St. Germain. You can substitute champagne (brut or extra brut), cava, or any other sparkling wine. 
  • St. Germain: This is a classic French elderflower liqueur, but feel free to try another brand. Or consider adding a homemade non-alcoholic elderflower syrup instead if you want to take the alcohol content down further. 
  • Club Soda: More bubbles are always good. Tonic water or sparkling water could be used instead, though note that tonic water has a slightly different flavor profile.
  • Lemon: Garnish with a lemon slice or a lemon twist. You can also sub in other citrus like lime, orange, or even grapefruit.

Fill a large wine glass or tumbler with ice. Pour in 3 ounces Prosecco (or other sparkling wine) and 2 ounces St. Germain elderflower liqueur.

Top with 2 ounces club soda. Stir lightly to combine. 

Garnish with a lemon slice, and serve.

🧐 Recipe FAQs for St. Germain Spritz

What does St. Germain taste like?

It’s floral, slightly sweet, and has notes of pear, citrus, and tropical fruit. Lovely and aromatic! 

Can I batch this cocktail ahead of time?

This is not a great cocktail for making ahead of time because the prosecco and club soda will lose their fizz the longer they sit. Since this cocktail is so easy to make, I’d recommend just making it individually for your guests. You can definitely slice a lemon in advance, and keep those in the fridge until you’re ready to serve. 

👩‍🍳 Expert Tips

Chill the Prosecco, St. Germain, and club soda ahead of time so the ice doesn’t melt too quickly and dilute the drink.

I like to use a cocktail stirrer when making these drinks since it does a good job of combining the liquids without popping bubbles. If you don’t have one, just stir gently. 

Want to try some other flavors? Herbs are lovely with this cocktail. Garnish with some fresh basil or fresh mint leaves. Fresh thyme or fresh lavender would also work. Try the Hugo Spritz next, which is a version of a St. Germain Spritz that includes mint leaves and lime wedges. You can also add a splash of lime juice or lemon juice to add more citrus notes to this elderflower spritz. 

Have any elderflower plants around you? This drink is beautiful with some handpicked elderflower blossoms as garnish. 

What to Serve with St. Germain Spritz
